CRUICKSHANK'S CROQUEMBOUCHE (French Style Wedding Cake)

The Croquembouches I make come with the wow factor.

 

Croquembouche is a profiterole tower in essence, with each profiterole filled with
chocolate ganash and covered with threads of caramel.

 

Through the surface decoration I have the ideas and skill to make these profiterole wedding cakes
a thing of beauty. I will use flowers, sugared almonds, fruit and ribbons to create a design
that matches your wedding colours and/or other themes.

Portion size is 3 to 4 choux buns per guest.
Minimum 15 guests
