During the last week of October every year, upon my families home Caribbean island of Dominica falls ‘Creole Day’. A day of great celebration and patriotism, when Dominicans go back to their roots, a central part being the traditional culinary delights that can be experienced. It is my hope that the attached menus will reflect and honour the fascinating uniqueness that is Caribbean food, that in itself acts as a mirror for the diversity that is Caribbean culture where each islands individuality is significant and proudly held on to by it’s people.
